A high protein mug cake packed with coconut, pecans, and naturally, chocolate.
Add the baking chocolate and ¼ C (60 mL) milk to a small bowl and microwave for 30 seconds. Stir well.
Mix the protein powder, coconut flour, coconut flakes, pecan pieces, and remaining milk (¼ C or 60mL) in a mug or bowl. (If you’d like the coconut flakes and nuts on top, add them at the end of mixing.)
Add the melted chocolate and milk to the remaining ingredients and stir well.
Microwave for 90-105 seconds, watching for overflow depending on the size of your mug or bowl. If the mug cake is close to overflowing, finish the remaining cook time in 5-second intervals.
If you're going to use the frosting, mix the ingredients in a small mug or bowl while the cake cooks.
If you're going to eat the cake straight from the mug or bowl you cooked it in, add the frosting directly on top. If you'd like to flip the cake out like you see in the photos, run a knife around the edges after the cake has cooled for a few minutes and flip it onto a plate.
