Pineapple Upside Down Cake in a Mug

Quite possibly the easiest pineapple upside down cake you'll ever make.

  • 1/3 C (45g) Sugar-Free Yellow Cake Mix
  • 2/3 scoop (23g) Protein Powder vanilla
  • 1/4 C (60g) Liquid Egg Whites
  • 1 Tbsp (14g) Light Butter
  • 1 Tbsp (15mL) Walden Farms Pancake Syrup
  • 1 slice Sliced Pineapple in Juice
  • 1 Maraschino Cherry


  1. Add the pancake syrup to the bottom of a mug and place the slice of pineapple in it. Add the maraschino cherry to the center of the pineapple slice. Set aside.

  2. In a separate bowl, mix the cake mix, protein powder, egg whites, and butter until smooth like cake batter.

  3. Pour the batter on top of the pineapple and microwave for 70-80 seconds or until the center of the cake is cooked through.

  4. Eat the cake straight out of the mug or flip it upside down on a plate in true pineapple upside down cake fashion.

Recipe Notes

  • If you have the calories available, you may want to use a whole egg in place of the egg whites. You'll have a fluffier cake.
  • Cook time is with a 1000w microwave.
