  • 1/4 C (30g) Pepper and Onion Blend I used frozen
  • 1/3 C Carbquick Biscuit Mix or Bisquick (higher carb)
  • 1 large Egg
  • 1 slice Bacon cooked and diced
  • 2 Tbsp (14g) Reduced Fat Shredded Cheddar


  1. Place the frozen peppers and onions in a mug or bowl and microwave for 1 minute. If you're using fresh, skip the microwave.

  2. Add the remaining ingredients to the mug and stir well. If you'd like your biscuit to come out extra pretty, you can mix in a separate bowl and transfer to a mug sprayed with nonstick cooking spray before microwaving.

  3. Cover the mug with a paper towel or paper plate and microwave for 60-75 seconds or until the center is cooked through. (If you're using egg whites, you may need to extend the cook time by 10-15 seconds.) Avoid overcooking.
