White Chocolate Pistachio No Bake Protein Bites

Quick and easy protein bites made with roasted pistachios, white chocolate chips, and protein powder.

Ingredients

White Chocolate Pistachio Protein Bites

  • 1/2 C (56g) Roasted Pistachios shelled and salted
  • 2 scoops (62g) PEScience Vanilla Protein Powder or your choice of protein powder
  • 1/4 C (56g) White Chocolate Chips
  • 3 Tbsp Fairlife Skim Milk divided

Optional Coating

  • 1 Tbsp (14g) White Chocolate Chips
  • 1 Tbsp (7g) Roasted Pistachios shelled and salted

Instructions

  1. Add the pistachios to food processor or blender and mix until you have a flour-like pistachio mixture. Transfer the pistachio flour to a mixing bowl.

  2. Add the protein powder to the bowl and stir to fully combine both ingredients.

  3. Add the chocolate chips and 1 tablespoon of the milk to a small bowl. Microwave for 20-30 seconds or until melted. Stir well.

  4. Pour the melted chocolate over the protein powder and pistachios. If you microwave the chocolate too long and it's super hot, let it cool briefly before adding.

  5. Stir the mixture with a rubber spatula until it begins to resemble a wet sand. Add 1 tablespoon of the remaining milk and continue to stir. Test the protein bites dough as you go. If you add to much liquid, the dough will become sticky or too soft to form. (Depending on the protein powder you use, you may not need both tablespoons of milk. Or you may need a bit more liquid.)

  6. Divide the ball of protein bites dough into 8 pieces and roll them between your palms to form balls.

  7. If you'd like to add the coating, add the extra chocolate chips and pistachios to a food processor and blend until you have a fine powder. Roll the protein bites in the powder. (Spray them with a bit of cooking spray if you have trouble getting the coating to stick.)
